Hachidori Sake: The Art of the Impossible.
Hachidori Sake is a unique portfolio of premium Japanese Sakes crafted to upturn preconceptions that Sake is an elite, acquired taste for the few. The story of these authentic Japanese Sakes and the Sake Master who handcrafts them is one of the impossible becoming reality—inviting everyone to appreciate exceptional, high-quality Sakes.
It all started with Stuart Morris, an unassuming Bostonian who developed a passion for Japan’s rich tradition of Sake brewing. His journey began in a sushi restaurant in the U.S. Virgin Islands, where his first taste of Sake sparked a lifelong fascination. From that moment, Stuart became determined to master the art of brewing Sake, a pursuit that seemed improbable. The craft of Japanese Sake brewing had long been passed down through generations in Japan.
But Hachidori is about making the impossible possible. Stuart’s persistence led him to Japan, where he trained under the respected Masanobu Shindo at Shindo Shuzo, one of Japan’s premier Sake breweries. For years, Stuart worked tirelessly, honing the ancient techniques of Sake production. His dedication eventually earned him the prestigious title of kikisake-shi (Master Sake Sommelier), making him one of the few non-Japanese individuals to receive this distinction in Japan.
Hachidori Sake is not just about Stuart’s personal journey. It’s a brand that reimagines what Japanese Sake can be. Our Sakes are meticulously crafted to bridge traditional Sake brewing methods with a modern, approachable style. We’re committed to shattering the myth that Sake is only for special occasions or seasoned connoisseurs. Instead, we believe high-quality Sake can be enjoyed by anyone who appreciates craftsmanship, flavor, and exploration.
